I grew up in a wonderful home with an amazing mother. My 2 grandmothers lived close by and we were spoiled by them. One was named Anna and the other Rhea Anna. And so my handle if you will is Granny Ann. Together those 3 women taught me everything and taught me how to love living life by hand. I hope you enjoy the adventure as much as I have.

Pumpkin Waffles

In honor of National Waffle Day I wanted to post one of my favorite waffle recipes. My father loved waffles. He did not like pancakes only waffles. I love all things breakfast so I didn't understand him. But I guess that is not unlike many children trying to understand their parents but just not getting it. Who doesn't love crunchy, fluffy, golden brown waffles! These pumpkin ones are so delicious with Apple Syrup or Buttermilk Syrup. You'll need to try each one.

Pumpkin Waffles

1-1/2 cups butter (not margarine), melted
3 cups flour
5 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger (opt.)
1/8 teaspoon salt
3 eggs
1/3 cup brown sugar
1 cup pumpkin
2-1/2 cups milk

In a large bowl, add flour, baking powder, baking soda and spices. Blend well with wire whisk. In a separate  bowl, beat eggs with brown sugar. Blend with pumpkin and milk. Add butter and blend well. Add pumpkin mixture to flour mixture and stir just until ingredients are moist. Do not over beat. Bake in waffle iron at medium-high temperature about 7 minutes.

Apple Cinnamon Syrup

Food is either for fun or for an adventure. I love pancakes and the great fun about them is that there are so many yummy things to go on, over or between them. Here is one of my favorites:

Apple Cinnamon Syrup

1 cup sugar
2 tablespoons cornstarch
2 teaspoons ground cinnamon
2 cups apple cider or apple juice
2 tablespoons lemon juice
1/4 cup butter

In a saucepan combine sugar, cornstarch, cinnamon, cider and lemon juice. Bring mixture to a boil. Remove the pan from the heat and add butter.
