In honor of National Waffle Day I wanted to post one of my favorite waffle recipes. My father loved waffles. He did not like pancakes only waffles. I love all things breakfast so I didn't understand him. But I guess that is not unlike many children trying to understand their parents but just not getting it. Who doesn't love crunchy, fluffy, golden brown waffles! These pumpkin ones are so delicious with
Apple Syrup or
Buttermilk Syrup. You'll need to try each one.
Pumpkin Waffles
1-1/2 cups butter (not margarine), melted
3 cups flour
5 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger (opt.)
1/8 teaspoon salt
3 eggs
1/3 cup brown sugar
1 cup pumpkin
2-1/2 cups milk
In a large bowl, add flour, baking powder, baking soda and spices. Blend well with wire whisk. In a separate bowl, beat eggs with brown sugar. Blend with pumpkin and milk. Add butter and blend well. Add pumpkin mixture to flour mixture and stir just until ingredients are moist. Do not over beat. Bake in waffle iron at medium-high temperature about 7 minutes.
