It seems like every Mexican restrauant has their own recipe for Sweet Pork Salad. My daughter-in-law Emily and I have our own as well. She likes hers with a kick but I don't so this is the mild version and all the heat is opt. Lots of work the first time you make everything but totally worth it. The lime rice is delicious all by itself.

3 heads Romaine lettuce, chopped
Pork
4 lbs pork roast
12 oz tomato sauce
3 teaspoons minced garlic
4 cups brown sugar
4 teaspoons cumin
1/4 cup molasses
½ teaspoon salt
12 oz. root beer, coke or Dr. Pepper
Combine in crockpot and cook 10 hours on low. Pour off juices and save, remove pork and shred.
12 oz tomato sauce
3 teaspoons minced garlic
4 cups brown sugar
4 teaspoons cumin
1/4 cup molasses
½ teaspoon salt
12 oz. root beer, coke or Dr. Pepper

½ juices from roast
½ jar green salsa verde (Herdez brand)
Opt:
4 Tablespoons molasses
1 cup brown sugar
1-2 teaspoon cumin
4 drops Tabasco sauce
Lime Rice
2 Tablespoons butter
1 ¼ cups rice
2 ¼ cups chicken broth
¾ teaspoon salt
Juice and zest of 1 lime
2 Tablespoons chopped cilantro
1/8 teaspoon cumin
In pot melt butter, fry rice for 2 minutes. Add liquid and other ingredients. Bring to boil, reduce heat, cover and cook until rice is tender approx. 20 mins
Creamy Cilantro Dressing
1 pkg. buttermilk ranch dressing (dry and the kind you add buttermilk to)
½ cup sour cream
½ cup mayo
1 cup buttermilk
1 cup fresh cilantro (chop after measuring)
1 teaspoon minced garlic
½ juices from roast

Marie’s Pico de Gallo
Tomatoes (unpeeled)
Onions, chopped
Cilantro , minced
Lime juice
To serve:
2 Tablespoons fresh lime juice
1/8 teaspoon cumin
1 Tablespoon sugar
Opt.
¼ teaspoon cayenne pepper
A few drops Tabasco sauce
Blend in blender until smooth
Marie’s Pico de Gallo
Tomatoes (unpeeled)
Onions, chopped
Cilantro , minced
Lime juice
To serve:
Melt some cheese on a tortilla, add a scoop of the sweet pork, rice and black or pinto beans. Cover all with salad. Add dressing, Pico do Gallo, Parmesan cheese,Guacamole, Parmesean cheese, Tortilla strips.
